- 1 1/2 to 2 pounds beef stew meat (cubed)
- 4 medium potatoes (cubed)
- 4 cups baby carrots
- 1 medium onion (cut into 8 wedges)
- 2 cans tomato sauce (8 ounces each)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Combine, beef, potatoes, carrots, onions, tomato sauce, salt and pepper in Crock-Pot slow cooker, stir to blend. Cover, cook on LOW 8 to 10 hours or until vegetables are tender. Makes 6 to 8 servings. This recipe is a favorite of Gregory James Routt.
